How to Make Authentic Ewedu Soup
🍲 Nigerian Yoruba Ewedu Soup:
- Remove the frozen Ewedu from the pack and defrost at room temperature or briefly in the microwave
- Blend the defrosted leaves with a small amount of water until smooth — the blender breaks down the leaf cell walls and releases the natural slimy draw
- Pour the blended Ewedu into a pot over medium heat
- Add a small piece of Kaun (potash/akanwu) if available — this boosts the draw significantly and helps preserve the vibrant green colour
- Stir continuously as the Ewedu heats — it will thicken and become silky and slimy as it cooks
- Add ground crayfish, ground pepper, and salt to taste
- Season with locust beans (Dawadawa/Iru) for authentic depth
- Simmer for 8–10 minutes until cooked through and beautifully silky
- Serve alongside Amala, Eba/Garri, or Pounded Yam with stew and Gbegiri soup
Tip: The Kaun/potash step is the secret to restaurant-quality Ewedu draw — even a tiny piece makes a significant difference to the thickness and green colour.
