🌿 Fermented Cassava (Manihot esculenta) — Granulated Semolina — cassava roots are peeled, washed, grated, mixed with a small amount of previously fermented cassava, and left to ferment for one to two days. The mash is then pressed to remove liquid, dried, sifted, and finally steamed — producing the fine, granulated semolina texture that closely resembles couscous in appearance and preparation, but with the distinctively mild, slightly sour, earthy flavour of fermented cassava.

How to Prepare Attiéké
🥘 Traditional preparation method:
- Add the Attiéké to a large bowl and moisten with at least 1 cup (250ml) of water — or more — to obtain well-wetted grains. Separate by mixing between your fingers to break up any clumps
- Place the moistened Attiéké in a clean cloth over a steamer
- Close the cloth and steam for 8–10 minutes
- Open the cloth and stir the Attiéké slightly — close the cloth again
- Steam for a further 5 minutes until fully cooked and fluffy
- Fluff with a fork to separate the grains and serve immediately
Microwave method (quick): Moisten with water, cover, and microwave on full power for 3–4 minutes — stir and serve.
