Attiéké Norimex Cassava Couscous – 1kg | Traditional Ivorian Fermented Cassava | UNESCO Intangible Cultural Heritage | Gluten-Free

The national dish of Côte d’Ivoire — Ivorian couscous, delivered to your UK door 🇬🇧

Have you ever thought about what food really shows the heart of a nation? For Côte d’Ivoire, that dish is Attiéké. Nicknamed “Ivorian Couscous” — Attiéké is the famous cassava semolina that is an integral part of Ivorian cuisine. A much-loved food made from fermented cassava, elevated to UNESCO Intangible Cultural Heritage status — recognised by the world as one of humanity’s most important culinary traditions.

Attiéké is a cassava couscous produced by steaming fermented cassava pulp semolina. It is a traditional calorie-dense food with a slightly sour taste — eaten with fish, meat, and vegetables. Attiéké is native to and traditionally produced in southern Côte d’Ivoire by Adjoukrou, Ebrié, and Avikam women — its production methods passed down through generations, from mother to daughter, for centuries.

For Ivorian, Beninese, and wider Francophone West African diaspora families in the UK — finding quality Attiéké has always been one of the most challenging parts of recreating authentic home cooking abroad. Norimex brings you 1kg of traditional Attiéké — ready to rehydrate, steam, and serve.

The Ingredient

🌿 Fermented Cassava (Manihot esculenta) — Granulated Semolina — cassava roots are peeled, washed, grated, mixed with a small amount of previously fermented cassava, and left to ferment for one to two days. The mash is then pressed to remove liquid, dried, sifted, and finally steamed — producing the fine, granulated semolina texture that closely resembles couscous in appearance and preparation, but with the distinctively mild, slightly sour, earthy flavour of fermented cassava.

How to Prepare Attiéké

🥘 Traditional preparation method:

  1. Add the Attiéké to a large bowl and moisten with at least 1 cup (250ml) of water — or more — to obtain well-wetted grains. Separate by mixing between your fingers to break up any clumps
  2. Place the moistened Attiéké in a clean cloth over a steamer
  3. Close the cloth and steam for 8–10 minutes
  4. Open the cloth and stir the Attiéké slightly — close the cloth again
  5. Steam for a further 5 minutes until fully cooked and fluffy
  6. Fluff with a fork to separate the grains and serve immediately

Microwave method (quick): Moisten with water, cover, and microwave on full power for 3–4 minutes — stir and serve.

How to Serve

🐟 Attiéké Poisson (Classic Ivorian) — the quintessential combination. Attiéké alongside grilled or fried whole fish, raw sliced onions, fresh tomatoes, and piment (chilli pepper sauce) — the most beloved everyday meal in Côte d’Ivoire

🐔 With Kedjenou — the famous Ivorian slow-cooked chicken stew with vegetables — Attiéké is Kedjenou’s perfect companion

🥩 With Grilled Meat — Attiéké alongside grilled chicken, lamb, or beef with pepper sauce

🥗 With Vegetables & Sauce — sautéed vegetables, onions, and tomatoes over warm Attiéké for a light, nutritious meal

🌍 As a couscous alternative — use anywhere you would use wheat couscous — in salads, as a side dish, or as the base for any saucy preparation
