Bobolo / Cassava Stick – 500g | Fermented Cassava Stick | Traditional Cameroonian Staple | Also Baton de Manioc
Cameroon’s most beloved fermented cassava — the stick-shaped staple that graces every Cameroonian table 🇬🇧
Bobolo or fermented cassava stick is a Cameroonian specialty. It is present on all tables in Cameroon and accompanies both soups and grilled meats. The elongated, stick-shaped fermented cassava log — wrapped in banana or plantain leaves — that is as central to Cameroonian identity as jollof is to Nigeria or fufu is to Ghana. International Cuisine
Bobolo is a delicious side dish originating from Cameroon. It is made from fermented cassava and wrapped in banana leaves. It has high fibre content and is low in fat. Usually eaten with braised fish and spicy stews. African Food Network
For the Cameroonian, Gabonese, Equatoguinean, and wider Central African diaspora community in the UK — Bobolo means home. The taste of a grandmother’s kitchen. The side dish that no Cameroonian meal is complete without.
The Ingredient & Traditional Preparation
🌿 Fermented Cassava (Manihot esculenta / Manioc) — the cassava is peeled and cut into pieces and soaked in water for a few days to make it soft. After this time the cassava is removed and pounded into a paste, then put into a bag that has holes and tied. It is then kept for a few days to allow the water to drain out — the water that drains during this process removes the undesired taste and odour from the paste. The paste is then removed from the bag, put into a large container, water is added and stirred until unanimous — then put into long stick-shaped pieces of leaves and tied with rope from plantain suckers. This complementary food from Cameroon results from a long procedure of preparation — 3–5 days of fermentation and steam cooking. Savourous
Bobolo vs Chikwangue — What’s the Difference?
Bobolo is the little brother of the Congolese Chikwangue. Both are fermented cassava products wrapped in leaves — but they are distinct: International Cuisine
- Bobolo (this product) — Cameroonian, long elongated stick shape, slightly firmer texture, wrapped tightly in a long stick format
- Chikwangue / Kwanga — Congolese, shorter rectangular bread-like shape, slightly softer
- Miondo — also Cameroonian, smaller and shorter than Bobolo — both Bobolo and Miondo are made the same way, but differ in size
