Cocoyam Fufu Flour is ground from cocoyam — known in Ghana as edo — the root of the elephant’s ear plant — and cassava, the starchy tuber from which tapioca is derived. How to Prepare
To produce instant Cocoyam Fufu:
- Bring a cup of plain water to boil in a saucepan
- Divide the boiling water into two parts
- Add the Fufu Flour to the heated water in the saucepan and stir with a wooden spoon
- Gradually add the remaining heated water and stir
- Place over medium heat and knead thoroughly for about 4 minutes, or until a smooth but thick consistency is achieved
- Allow the fufu to cool slightly and serve
For stiffer fufu: Use a little less water, or add a little more Fufu Flour to your mixture.
