🌽 Premium Corn Flour (Zea mays) — Tuo Zaafi Grade — finely milled maize flour specifically selected and milled to the consistency required for authentic Tuo Zaafi preparation. The flour produces a smooth, lump-free, consistently textured TZ that is soft, slightly sticky, and holds together beautifully when served — exactly as it should be.

How to Make Authentic Tuo Zaafi

🥣 Classic TZ Method:

  1. Scoop 1 cup of Duaba Afro Foods Tuo Zaafi Flour and mix with cold water. Stir thoroughly until the mixture is completely smooth and consistent — no lumps
  2. Bring a separate pot of water to a boil with a pinch of salt. Add a small amount of the cold flour mixture to the boiling water first — stir well and allow to cook for 3–4 minutes (this is the key step that prevents lumps and creates the correct TZ texture)
  3. Add the remainder of the flour mixture to the boiling porridge gradually, stirring continuously with a wooden spoon or stirring stick
  4. Stir vigorously and consistently — patience and consistent stirring are essential. Avoid rushing the process
  5. Continue stirring for 20–30 minutes, adding reserved flour mixture as needed to keep the mixture moist and prevent sticking
  6. When the TZ pulls cleanly from the sides of the pot and has a smooth, glossy, slightly sticky texture — it is ready
  7. Scoop into balls or mound directly into serving dishes
  8. Serve immediately alongside Ayoyo soup, Okra soup, or any preferred soup or stew

Tip: The two-step flour addition (a small amount first, then the remainder) is the most important technique for authentic lump-free TZ. Never add all the flour at once to boiling water.
