Step 1 Prepare the Yam:

⦁ Peel and chop the yam into smaller pieces. Wash the yam pieces a couple of times to remove

excess starch.

⦁ Place the yam pieces in a pot and add enough water to cover them. Add 1 teaspoon of salt and the whole scotch bonnet pepper.

⦁ Bring the water to a boil and cook the yam until it is tender, about 7-8 minutes.

Step 2 Mash the Yam:

⦁ Once the yam is cooked, remove the scotch bonnet pepper and set it aside.

⦁ Drain the water and transfer the yam to a mortar and pestle (or use a potato masher and food processor).

⦁ Mash the yam until smooth, adding a little water if needed to achieve the desired consistency.

Step 3 Prepare the Ingredients:

⦁ In a blender, blend the roasted peanuts, chopped onion, garlic, and a little water until smoot.

⦁ In a separate pot, heat the palm oil over medium heat. Add the blended mixture and cook for about 10 minutes, stirring occasionally until the oil starts to separate.

Step 4 Combine Ingredients:

⦁ Add the mashed yam to the pot with the oil mixture. Stir well to combine.

⦁ Add the remaining salt, black pepper, paprika, turmeric, dried thyme, and green onions. Mix

thoroughly.

Step 5 Serve:

⦁ Serve the Etor hot with hard boiled eggs on the side. You can also garnish with chopped avocado if desired.
