For Nkate Nkwan:

  1. Prepare the Sauce: Heat the red palm oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger, and sauté until the onion is soft and translucent.
  2. Add Tomatoes and Spices: Add the chopped tomatoes, green chilies, ground ginger, ground garlic, and cayenne pepper to the pot. Cook until the tomatoes are soft and the mixture is well combined.
  3. Blend Peanut Butter: In a blender, combine the peanut butter with about 1 cup of water and blend until smooth.
  4. Combine Ingredients: Add the blended peanut butter mixture to the pot with the tomato sauce. Stir to combine and add enough water to reach your desired consistency. Bring to a boil, then reduce heat and let it simmer for about 30 minutes, until the flavors meld together and the sauce thickens.
  5. Season: Taste and adjust seasoning with salt.

For Omo Tuo (optional side):
