Rinse the Rice:

  1. ⦁ Thoroughly rinse the short-grain rice in cold water until the water runs clear. This helps to remove excess starch.

Cook the Rice:

  1. ⦁ In a large pot, bring 6 cups of water to a boil. Add the rinsed rice and reduce the heat to medium-low.
  2. ⦁ Cook the rice until it becomes very soft and waterlogged, stirring occasionally to prevent sticking. This should take about 30-40 minutes.

Mash the Rice:

  1. ⦁ Once the rice is very soft and most of the water is absorbed, use a wooden spatula or spoon to mash the rice against the sides of the pot. Continue mashing until the rice forms a smooth, dough-like consistency.

Form the Rice Balls:

  1. ⦁ Wet your hands with a little water to prevent sticking, then scoop out portions of the mashed rice and form them into small balls or mounds. You can also shape the Tuwo Shinkafa into a single large mound if preferred.

Serve:

  1. ⦁ Serve the Tuwo Shinkafa hot with your favorite Nigerian soup, such as Egusi Soup, Okra Soup, or Miyan Kuka.
