Prepare the Seeds:

  1. If the pumpkin seeds are not already roasted, roast them in the oven until they are golden brown. Once cooled, grind them into a fine powder.

Sauté the Vegetables:

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until it becomes translucent.

Add the Chili Peppers:

  1. Add the chopped chili peppers to the pot and cook for another 2-3 minutes until they soften.

Cook the Seeds:

  1. Add the ground pumpkin seeds to the pot and stir well to combine with the onions and chili peppers. Pour in enough water or broth to cover the seeds.

Simmer:

  1. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 15-20 minutes, or until the seeds are tender and the flavors meld together.

Add the Fish:

  1. Add the deboned smoked fish pieces to the pot and stir well. Continue to simmer for another 10 minutes.

Season and Serve:

  1. Season with salt and any optional spices like garlic or ginger. Taste and adjust the seasoning if needed. Serve the Mbika hot with fufu, pounded yam, or boiled rice.
