Instructions

Prepare the Corn:

  1. ⦁ If using fresh corn, remove the kernels from the cob. If using frozen corn, thaw it before use.

Blend Ingredients:

  1. ⦁ In a large bowl, combine the corn kernels, cassava flour, palm oil, chopped onion, minced garlic, salt, and black pepper. Mix well until the ingredients are evenly distributed.

Wrap the Fritters:

  1. ⦁ Cut banana leaves into squares or use aluminum foil as a substitute. Place a portion of the mixture (about 1/4 cup) in the center of each leaf or foil square.
  2. ⦁ Fold the leaves or foil to wrap the mixture securely, forming small packets.

Steam the Fritters:

  1. ⦁ In a large pot, bring water to a boil. Place the wrapped fritters in a steamer basket or directly in the pot (if using banana leaves, place them on top of the boiling water).
  2. ⦁ Cover the pot and steam for about 30-40 minutes, or until the fritters are cooked through and the leaves are tender.

Serve:

  1. ⦁ Carefully unwrap the fritters and serve them hot. They can be enjoyed as a snack or side dish with stews, sauces, or on their own.
