Prepare the Bamboo Shoots:

⦁ Rinse the fermented bamboo shoots thoroughly to remove any dirt or impurities. Cut them into smaller pieces if needed.

⦁ In a large pot, bring 3 cups of water to a boil. Add the bamboo shoots and cook for about 20-30 minutes until they are tender.

⦁ In a separate pan, heat a little oil over medium heat. Add the chopped onion, garlic, and ginger, and sauté until the onion is translucent.

⦁ Add the chopped tomatoes and chili powder (if using) to the pan. Cook for about 5-7 minutes until the tomatoes are softened.

⦁ Add the groundnut paste and salt to the pan, and stir well to combine. Let it simmer for about 10 minutes.
