Step 1 Prepare the Yam:

  1. ⦁ Peel and cut the yam into medium-sized chunks. Rinse the yam pieces a couple of times to remove excess starch.

Step 2 Cook the Yam:

  1. ⦁ Place the yam pieces in a pot and add enough water to cover them. Bring to a boil and cook for about 15 minutes until the yam is tender.

Step 3 Prepare the Tomato Blend:

  1. ⦁ In a blender, blend the chopped tomatoes, diced onion, ginger, and garlic with 1/2 cup of water until smooth.

Step 4 Cook the Soup:

  1. ⦁ In a separate pot, heat the palm oil over medium heat. Add the blended tomato mixture and cook for about 10 minutes, stirring occasionally until the oil starts to separate.

Step 5 Combine Ingredients:

  1. ⦁ Add the cooked yam pieces to the tomato mixture. Stir well to combine. Add the crayfish (if using), salt, seasoning cube, and additional water if needed. Let it simmer for about 10 minutes.

Step 6 Finish and Serve:

  1. ⦁ Mash some of the yam pieces with a potato masher or wooden spoon to create a creamy texture, leaving some chunks for added texture. Add fresh herbs if desired. Let it simmer for another 5 minutes.

Serve:

  1. ⦁ Serve hot with a side of fufu, rice, or any starchy side dish of your choice.
