Poisson Braisé, also known as Roast Fish, is a popular Cameroonian dish that involves grilling or roasting fish with a flavorful marinade. Ingredients
    For the Marinade:
  • 1 whole ⦁ fish (tilapia, mackerel, or snapper)
  • 1 small ⦁ onion, chopped
  • 2 cloves ⦁ garlic, minced
  • 1 small ⦁ green bell pepper, chopped
  • 1 small ⦁ red bell pepper, chopped
  • 1 small ⦁ habanero pepper, finely chopped (optional)
  • 1 small ⦁ leek, chopped
  • 1 small ⦁ celery stalk, chopped
  • 1 small ⦁ ginger root, peeled and chopped
  • 1 sprig ⦁ of parsley
  • 1 sprig ⦁ of basil
  • 1 sprig ⦁ of thyme
  • 1 teaspoon ⦁ African nutmeg (pebe)
  • 1 teaspoon ⦁ white pepper
  • 1 teaspoon ⦁ black pepper
  • 1 teaspoon ⦁ salt
  • 2 tablespoons ⦁ vegetable oil
  • 1 Maggi ⦁ seasoning cube
    • For Grilling:
  • ⦁ Charcoal or gas grill
  • ⦁ Aluminum foil (optional)
Instructions
    Step 1 Prepare the Marinade:
  1. ⦁ In a blender, combine the chopped onion, garlic, green bell pepper, red bell pepper, habanero pepper (if using), leek, celery, ginger, parsley, basil, thyme, African nutmeg, white pepper, black pepper, salt, vegetable oil, and Maggi seasoning cube. Blend until smooth.
    2. Step 2 Marinate the Fish:
  2. ⦁ Rub the marinade all over the fish, making sure to get it into the slashes and the cavity. Cover and refrigerate for at least 1 hour, or overnight for the best results.
    3. Poisson Braisé (Roast Fish)
    Step 3 Prepare the Grill:
  3. ⦁ Preheat your grill to medium-high heat. If using a charcoal grill, let the coals burn until they're covered with a layer of white ash. For a gas grill, ensure it's evenly heated.
    4. Step 4 Grill the Fish:
  4. ⦁ Place the marinated fish on the grill. Cook for about 5-7 minutes on each side, depending on the size of the fish, until the fish is cooked through and the skin is crispy.
    5. Step 5 Serve:
  5. ⦁ Carefully remove the fish from the grill and serve hot. Poisson Braisé is often served with sides like fried plantains, steamed vegetables, or a side of groundnut paste (Mboh).
