Description

Katogo is a traditional Ugandan dish made from green bananas (matooke) and Irish potatoes, often cooked with meat or beans. It's a hearty and nutritious meal that's popular for breakfast or lunch. The dish is known for its rich, flavorful taste and comforting texture.

Ingredients
  • 4 green ⦁ 4-5 bananas (matooke)
  • 2 Irish ⦁ 2-3 potatoes, peeled and cut into chunks
  • 500 meat ⦁ g (beef, chicken, or offal)
  • 1 onion, ⦁ chopped
  • 2 tomatoes, ⦁ chopped
  • 2 cloves ⦁ of garlic, minced
  • 1 teaspoon ⦁ curry powder
  • 1 teaspoon ⦁ paprika
  • 1 tablespoon ⦁ cooking oil
  • ⦁ Salt and pepper to taste
Instructions
    Cook the Green Bananas and Potatoes:
  1. ⦁ Place the green banana and potato chunks in a large cooking pot and add enough water to cover them. Cook on medium heat until they are tender, which usually takes about 30 minutes.
  2. Prepare the Meat:
  3. ⦁ In a separate pan, heat the cooking oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is golden brown.
  4. Cook the Meat:
  5. ⦁ Add the meat pieces to the pan and cook until browned. If using offal, be sure to clean and boil it beforehand.
  6. Add the Tomatoes and Spices:
  7. ⦁ Add the chopped tomatoes, curry powder, paprika, salt, and pepper to the pan. Stir well to combine and let it simmer for about 10-15 minutes, or until the flavors are well incorporated.
  8. Combine the Ingredients:
  9. ⦁ Once the green bananas and potatoes are tender, drain the water and add the meat mixture to the pot. Gently stir the ingredients together and let them simmer for an additional 5-10 minutes to allow the flavors to meld.
  10. Serve:
  11. ⦁ Remove from heat and serve hot. Katogo is often enjoyed with a side of vegetables or a fresh salad.
