Ingredients
2large ⦁ yams, peeled and cut into fries
1octopus, ⦁ cleaned and cut into pieces
1/2cup ⦁ vegetable oil (or palm oil)
1large ⦁ onion, finely chopped
3garlic ⦁ cloves, minced
2scotch ⦁ bonnet peppers, finely chopped (adjust according to your spice preference)
1teaspoon ⦁ curry powder
1teaspoon ⦁ thyme (dried or fresh)
1bay ⦁ leaf
⦁ Salt to taste
⦁ Optional: smoked fish or dried shrimp for added flavor
Instructions
⦁ Heat the vegetable oil in a large pot over medium heat. Add the chopped onions, garlic, and scotch bonnet peppers. Sauté until the onions are translucent and fragrant, about 5-7 minutes.
⦁ Add the yam fries to the pot and stir to coat them with the onion mixture. Cook for about 10-15 minutes, turning occasionally, until the yams are golden brown and crispy. Remove from the pot and set aside.
⦁ In the same pot, add a little more oil if needed. Add the octopus pieces and cook for about 10-15 minutes, turning occasionally, until the octopus is tender and cooked through. Season with curry powder, thyme, bay leaf, and salt to taste.
⦁ Once the octopus is cooked, add the crispy yam fries back to the pot and stir to combine. Cook for an additional 2-3 minutes to allow the flavors to meld together.
