Description

Yam Fries and Octopus is a delightful and flavorful dish that combines the earthy taste of yam fries with the tender, savory flavor of octopus. It's a popular dish in Ghana, often enjoyed as a hearty meal or snack.

Ingredients
  • 2 large ⦁ yams, peeled and cut into fries
  • 1 octopus, ⦁ cleaned and cut into pieces
  • 1/2 cup ⦁ vegetable oil (or palm oil)
  • 1 large ⦁ onion, finely chopped
  • 3 garlic ⦁ cloves, minced
  • 2 scotch ⦁ bonnet peppers, finely chopped (adjust according to your spice preference)
  • 1 teaspoon ⦁ curry powder
  • 1 teaspoon ⦁ thyme (dried or fresh)
  • 1 bay ⦁ leaf
  • ⦁ Salt to taste
  • ⦁ Optional: smoked fish or dried shrimp for added flavor
Instructions
  1. ⦁ Heat the vegetable oil in a large pot over medium heat. Add the chopped onions, garlic, and scotch bonnet peppers. Sauté until the onions are translucent and fragrant, about 5-7 minutes.
  2. ⦁ Add the yam fries to the pot and stir to coat them with the onion mixture. Cook for about 10-15 minutes, turning occasionally, until the yams are golden brown and crispy. Remove from the pot and set aside.
  3. ⦁ In the same pot, add a little more oil if needed. Add the octopus pieces and cook for about 10-15 minutes, turning occasionally, until the octopus is tender and cooked through. Season with curry powder, thyme, bay leaf, and salt to taste.
  4. ⦁ Once the octopus is cooked, add the crispy yam fries back to the pot and stir to combine. Cook for an additional 2-3 minutes to allow the flavors to meld together.
  5. ⦁ Serve the Yam Fries and Octopus hot, optionally garnished with smoked fish or dried shrimp for added flavor. Enjoy!
