Description

The Ugandan Rolex is a popular street food that combines a chapati (Indian flatbread) with a veggie omelette, rolled together to create a delicious and satisfying meal. The name "Rolex" comes from the method of preparation, as you "roll" the omelette into the chapati. It's a quick and easy dish that's perfect for a hearty snack or lunch.

Ingredients
    For the Chapati:
  • 2 cups ⦁ all-purpose flour
  • 1 teaspoon ⦁ salt
  • 1 teaspoon ⦁ sugar
  • 1/4 cup ⦁ vegetable oil
  • 3/4 cup ⦁ warm water
  • For the Omelette:
  • 4 large ⦁ eggs
  • 1/2 cup ⦁ shredded cabbage
  • 1 small ⦁ tomato, finely chopped
  • 1 small ⦁ onion, finely chopped
  • 1 green ⦁ chili, finely chopped
  • 1 tablespoon ⦁ vegetable oil
  • ⦁ Salt and pepper to taste
Instructions
    For the Chapati:
  1. ⦁ In a large bowl, combine the flour, salt, and sugar. Mix well.
  2. ⦁ Add the vegetable oil and mix until the flour is crumbly.
  3. ⦁ Gradually add the warm water and knead the dough until it becomes smooth and elastic. This should take about 5-7 minutes.
  4. ⦁ Divide the dough into 4 equal portions and roll each portion into a thin circle on a lightly floured surface.
  5. ⦁ Heat a non-stick pan over medium heat and cook each chapati for about 2-3 minutes on each side until golden brown spots appear. Brush with a little oil while cooking.
  6. For the Omelette:
  7. ⦁ In a bowl, beat the eggs and season with salt and pepper.
  8. ⦁ Heat the vegetable oil in a frying pan over medium heat.
  9. ⦁ Pour the beaten eggs into the pan and cook until just set.
  10. ⦁ Add the shredded cabbage, chopped tomato, onion, and green chili to the eggs.
  11. ⦁ Cook for another 2-3 minutes until the vegetables are tender and the eggs are fully cooked.
  12. To Assemble:
  13. ⦁ Place one chapati on a flat surface.
  14. ⦁ Place the omelette on top of the chapati.
  15. ⦁ Roll the chapati and omelette together tightly to form a wrap.
