Description

Tuwo Shinkafa is a traditional dish from Northern Nigeria made from soft, short-grain rice. It's a staple food often served with rich soups and stews like Miyan Kuka, Miyan Taushe, and Okra Soup. This comforting dish is known for its smooth, dough-like consistency.

Ingredients
  • 3 cups ⦁ short-grain rice (such as Arborio or glutinous rice)
  • 6 cups ⦁ water
  • ⦁ Salt to taste
Instructions
    Rinse the Rice:
  1. ⦁ Thoroughly rinse the short-grain rice in cold water until the water runs clear. This helps to remove excess starch.
  2. Cook the Rice:
  3. ⦁ In a large pot, bring 6 cups of water to a boil. Add the rinsed rice and reduce the heat to medium-low.
  4. ⦁ Cook the rice until it becomes very soft and waterlogged, stirring occasionally to prevent sticking. This should take about 30-40 minutes.
  5. Mash the Rice:
  6. ⦁ Once the rice is very soft and most of the water is absorbed, use a wooden spatula or spoon to mash the rice against the sides of the pot. Continue mashing until the rice forms a smooth, dough-like consistency.
  7. Form the Rice Balls:
  8. ⦁ Wet your hands with a little water to prevent sticking, then scoop out portions of the mashed rice and form them into small balls or mounds. You can also shape the Tuwo Shinkafa into a single large mound if preferred.
  9. Serve:
  10. ⦁ Serve the Tuwo Shinkafa hot with your favorite Nigerian soup, such as Egusi Soup, Okra Soup, or Miyan Kuka.
