Description

Tuo Zaafi, often referred to as TZ, is a popular Ghanaian dish originating from the Northern regions of Ghana. It is a soft, less sticky corn dough that is typically served with a rich vegetable soup, such as Ayoyo (bitter leaves) or Okra soup. This dish has gained popularity across the country and is enjoyed by many for its comforting and nutritious qualities.

Ingredients
    For the Tuo Zaafi:
  • 4 cups ⦁ corn flour
  • ⦁ Water
  • ⦁ Salt (to taste)
  • For the Ayoyo Soup:
  • 1 bunch ⦁ Ayoyo leaves (Corchorus olitorius)
  • 1 teaspoon ⦁ salt petre (potassium nitrate)
  • 1 teaspoon ⦁ dawadawa (African locust bean)
  • 1 tablespoon ⦁ powdered pepper
  • 4 medium ⦁ onions
  • ⦁ Meat (enough for the soup)
  • 4 pieces ⦁ dried fish
  • 1 smoked ⦁ salmon
  • 4 medium ⦁ fresh tomatoes
  • 1 small ⦁ tin tomatoes
  • ⦁ Salt (to taste)
  • 6 tablespoons ⦁ palm oil
  • ⦁ Any preferred spices
Instructions
    Prepare the Corn Flour Mixture:
  1. Mix the corn flour with water to create an even mixture.
  2. Pour the mixture into boiling water and stir until it reaches a porridge-like consistency.
  3. Cover and cook for a few minutes, then set some aside.
  4. Add more corn flour to the mixture on the fire and stir until it becomes sticky.
  5. Gradually add the reserved mixture in small portions while stirring until the mixture is smooth and slightly firm.
  6. Stir for a few more minutes, and your Tuo Zaafi is ready!
  7. Method for Ayoyo Soup:
  8. Prepare the Ayoyo Leaves:
  9. ⦁ Wash the Ayoyo leaves thoroughly and cut into tiny pieces.
  10. ⦁ Put water on fire in a cooking pot and add the salt petre.
  11. ⦁ When the water boils, add the cut Ayoyo leaves and stir periodically.
  12. ⦁ Beat the leaves with your ladle until it becomes slimy with bubbles.
  13. Cook the Soup:
  14. ⦁ Add the dawadawa, broken smoked herrings, and your choice of natural spices for flavor.
  15. ⦁ Allow the soup to cook until it becomes slimy but thick.
  16. ⦁ You can enjoy it with the Tuo Zaafi as it is or choose to add your favorite stew for a unique taste.
