Shoko is a traditional Ghanaian stew made with beef and spinach, cooked in a rich tomato and spice sauce. It's hearty and flavorful, often served with plantains, fufu, or steamed rice.
Ingredients
1pound stewing beef, cut into cubes
2large onions, finely chopped
2tomatoes, finely chopped
2green chilies, finely chopped
2cloves garlic, minced
1piece -inch ginger, minced
2tablespoons red palm oil (or vegetable oil)
1teaspoon ground ginger
1teaspoon ground garlic
1teaspoon ground cayenne pepper
Salt (to taste)
Water or beef broth
1pound fresh spinach, cleaned and chopped
Instructions
Prepare the Beef: Season the beef cubes with salt, ground ginger, ground garlic, and cayenne pepper. Let it marinate for about 30 minutes.
Add Tomatoes and Spices: Add the chopped tomatoes and green chilies to the pot. Cook until the tomatoes are soft and the mixture is well combined.
Combine Ingredients: Add the marinated beef cubes to the pot and stir to coat them with the sauce. Add enough water or beef broth to cover the beef and bring to a boil. Reduce heat and let it simmer for about 1.5 hours, until the beef is tender.
Add Spinach: Add the chopped spinach to the pot and stir to combine. Continue to simmer for another 30 minutes, until the spinach is cooked and the flavors meld together.
Season: Taste and adjust seasoning with salt.
Serving: Serve the Shoko stew with plantains, fufu, or steamed rice.
