Okro Stew, also known as Okra Stew, is a traditional Ghanaian dish made with okra, tomatoes, onions, and spices. It's known for its unique slimy texture and rich flavor, often served with Banku or Fufu.
Ingredients
500fresh g okra (about 1 lb)
2large tomatoes, chopped
1large onion, finely chopped
2green chilies, finely chopped
2cloves garlic, minced
1piece -inch ginger, minced
2tablespoons red palm oil (or vegetable oil)
1teaspoon ground ginger
1teaspoon ground garlic
1teaspoon ground cayenne pepper
Salt (to taste)

Instructions
Prepare the Okra: Wash and slice the okra. If you prefer less sliminess, you can blanch the okra in boiling water for a few minutes and then drain.
Add Tomatoes and Spices: Add the chopped tomatoes, green chilies, ground ginger, ground garlic, and cayenne pepper to the pot. Cook until the tomatoes are soft and the mixture is well combined.
Combine Ingredients: Add the sliced okra to the pot and stir to combine. Add enough water to cover the okra and bring to a boil. Reduce heat and let it simmer for about 30 minutes, until the flavors meld together and the sauce thickens.
Season: Taste and adjust seasoning with salt.
Serving: Serve the Okro Stew with Banku, Fufu, or steamed rice.
