Nigerian Suya is a beloved street food made from thinly sliced beef marinated in a unique blend of spices and ground peanuts. The meat is skewered and grilled, resulting in a smoky, spicy, and savory delight. Often enjoyed as a snack or appetizer, it's a quintessential Nigerian treat.

Ingredients
    For the Marinade:
  • 2 pounds ⦁ of beef (preferably sirloin or flank)
  • 2 tablespoons ⦁ of vegetable oil
  • 2 cloves ⦁ of garlic, minced
  • 1 small ⦁ onion, finely chopped
  • 1 chicken ⦁ bouillon cube (optional)
  • ⦁ Salt to taste
  • ⦁ Suya spice mix (see below)
  • For the Suya Spice Mix:
  • ⦁ ½ cup ground roasted peanuts (also known as kuli kuli)
  • 2 tablespoons ⦁ ground cayenne pepper
  • 1 tablespoon ⦁ paprika
  • 1 tablespoon ⦁ garlic powder
  • 1 tablespoon ⦁ onion powder
  • 1 teaspoon ⦁ ground ginger
  • 1 teaspoon ⦁ salt
Instructions
    Prepare the Marinade:
  1. ⦁ In a large bowl, mix the vegetable oil, minced garlic, chopped onion, chicken bouillon cube, and salt.
  2. ⦁ Add the thinly sliced beef to the marinade and mix well to ensure it's fully coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Prepare the Suya Spice Mix:
  4. ⦁ In a bowl, combine the ground roasted peanuts, ground cayenne pepper, paprika, garlic powder, onion powder, ground ginger, and salt. Mix well and set aside.
  5. Skewer the Meat:
  6. ⦁ Thread the marinated beef slices onto wooden skewers, making sure they are not too tightly packed.
  7. Coat with Suya Spice Mix:
  8. ⦁ Generously coat the skewered meat with the suya spice mix, ensuring an even coverage.
  9. Grill the Meat:
  10. ⦁ Preheat your grill to medium-high heat.
  11. ⦁ Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the meat is cooked through and has a nice char.
  12. Serve:
  13. ⦁ Remove the skewers from the grill and let them rest for a few minutes.
  14. ⦁ Serve the suya skewers hot, with a side of sliced onions, fresh tomatoes, and cabbage.
