Miyan Kuka, also known as Baobab Soup, is a traditional Northern Nigerian dish made from dried baobab leaves. It's a nutritious and flavorful soup that pairs well with tuwo, rice, or yam. The soup is known for its rich, earthy taste and vibrant green color.

Ingredients
  • 2 tablespoons ⦁ dried baobab leaves (kuka powder)
  • 1/2 kg ⦁ beef, cut into pieces
  • 3 medium ⦁ catfish, cleaned
  • 1 small ⦁ onion, finely chopped
  • 3 cloves ⦁ garlic, minced
  • 1 small ⦁ piece ginger, crushed
  • 1/2 cup ⦁ palm oil
  • 1 tablespoon ⦁ locust beans (iru)
  • 1 tablespoon ⦁ ground crayfish
  • 1/2 tablespoon ⦁ dry pepper (to taste)
  • 1 teaspoon ⦁ salt (to taste)
  • 1 cup ⦁ water
  • 2 seasoning ⦁ cubes (Maggi or Knorr)
  • ⦁ Optional: smoked fish or dried shrimp for added flavor
Instructions
    Prepare the Meat:
  1. Wash the beef and season with salt, seasoning cubes, and chopped onions. Cook until tender, then set aside.
  2. Cook the Vegetables:
  3. In a large pot, heat the palm oil over medium heat. Add the chopped onions, garlic, and ginger, and sauté until the onions are translucent.
  4. Add the Baobab Leaves:
  5. Gradually add water to the pot and stir in the kuka powder, ensuring there are no lumps. Let it simmer for about 10 minutes.
  6. Combine the Ingredients:
  7. Add the cooked meat, catfish, locust beans, ground crayfish, dry pepper, and salt to the pot. Stir well to combine.
  8. Simmer the Soup:
  9. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-30 minutes, or until the catfish is cooked and the flavors are well combined.

  11. Serve the Miyan Kuka hot with tuwo, rice, or yam. Enjoy!
