Mbika (Pumpkin Seed Stew)

Ingredients
  • 2 cups pumpkin seeds (egusi seeds)
  • 1 large onion, chopped
  • 2 red 2-3 chili peppers, chopped
  • 1 smoked fish, deboned and cut into pieces
  • 2 tablespoons vegetable oil
  • 1 cup water or broth
  • 1 teaspoon salt (or to taste)
  • Optional: garlic, ginger, or other spices for added flavor
Instructions
    Prepare the Seeds:
  1. If the pumpkin seeds are not already roasted, roast them in the oven until they are golden brown. Once cooled, grind them into a fine powder.
  2. Sauté the Vegetables:
  3. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until it becomes translucent.
  4. Add the Chili Peppers:
  5. Add the chopped chili peppers to the pot and cook for another 2-3 minutes until they soften.
  6. Cook the Seeds:
  7. Add the ground pumpkin seeds to the pot and stir well to combine with the onions and chili peppers. Pour in enough water or broth to cover the seeds.
  8. Simmer:
  9. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 15-20 minutes, or until the seeds are tender and the flavors meld together.
  10. Add the Fish:
  11. Add the deboned smoked fish pieces to the pot and stir well. Continue to simmer for another 10 minutes.
  12. Season and Serve:
  13. Season with salt and any optional spices like garlic or ginger. Taste and adjust the seasoning if needed. Serve the Mbika hot with fufu, pounded yam, or boiled rice.
