Description

Light Soup, also known as Tomato Soup, is a traditional Ghanaian soup made with fresh tomatoes, onions, and spices. It is often served with fufu, a starchy side dish made from cassava or plantains. This soup is known for its rich flavor and nutritional benefits.

Ingredients
  • 2 large ⦁ tomatoes
  • 2 small ⦁ onions
  • 3 green ⦁ scotch bonnet peppers
  • 3 red ⦁ scotch bonnet peppers
  • 2 habanero ⦁ peppers
  • 1 teaspoon ⦁ tomato paste
  • 1 teaspoon ⦁ shrimp powder (optional)
  • 1 teaspoon ⦁ salt
  • 1 teaspoon ⦁ ginger, minced
  • 1 teaspoon ⦁ garlic, minced
  • 1 bay ⦁ leaf
  • 1 seasoning ⦁ cube
  • 2 cups ⦁ water
  • ⦁ Meat or fish of your choice (goat meat, beef, chicken, or fish)
  • ⦁ Vegetable oil
Instructions
  1. Prepare the Ingredients: Clean and wash the meat or fish thoroughly. Blend the habanero peppers, one onion, ginger, and garlic to make a paste.
  2. Cook the Meat/Fish: In a large pot, combine the meat or fish with the blended paste, 2 cups of water, bay leaf, seasoning cube, and salt. Cook over medium-high heat for about 15 minutes, covered.
  3. Prepare the Tomatoes: In a separate pot, add 3 cups of water and the remaining tomatoes and onions. Bring to a boil and let it cook for 10 minutes. Strain and blend the mixture with 2 cups of water until smooth.
  4. Combine Ingredients: Strain the blended tomato mixture into the pot with the meat or fish. Stir well to combine.
