Koki, also known as Koki Corn, is a traditional Cameroonian dish made from fresh corn and cassava. These fritters are savory, slightly sweet, and crispy on the outside, making them a popular snack or side dish.

Ingredients
  • 4 cups ⦁ fresh corn kernels (or frozen/thawed corn)
  • 1 cup ⦁ cassava flour (or cornmeal)
  • 1/2 cup ⦁ palm oil
  • 1 small ⦁ onion, finely chopped
  • 1 clove ⦁ garlic, minced
  • 1 teaspoon ⦁ salt
  • 1/2 teaspoon ⦁ black pepper
  • ⦁ Banana leaves or aluminum foil (for wrapping)
  • ⦁ Water for steaming
Instructions
    Prepare the Corn:
  1. ⦁ If using fresh corn, remove the kernels from the cob. If using frozen corn, thaw it before use.
  2. Blend Ingredients:
  3. ⦁ In a large bowl, combine the corn kernels, cassava flour, palm oil, chopped onion, minced garlic, salt, and black pepper. Mix well until the ingredients are evenly distributed.
  4. Wrap the Fritters:
  5. ⦁ Cut banana leaves into squares or use aluminum foil as a substitute. Place a portion of the mixture (about 1/4 cup) in the center of each leaf or foil square.
  6. ⦁ Fold the leaves or foil to wrap the mixture securely, forming small packets.
  7. Steam the Fritters:
  8. ⦁ In a large pot, bring water to a boil. Place the wrapped fritters in a steamer basket or directly in the pot (if using banana leaves, place them on top of the boiling water).
  9. ⦁ Cover the pot and steam for about 30-40 minutes, or until the fritters are cooked through and the leaves are tender.
  10. Serve:
  11. ⦁ Carefully unwrap the fritters and serve them hot. They can be enjoyed as a snack or side dish with stews, sauces, or on their own.
