Description

Kachumbari is a fresh and tangy tomato and onion salad that is popular in Uganda and across East Africa. It's a simple yet flavorful dish that often accompanies grilled meats and other main courses.

Ingredients
  • 4 ripe ⦁ tomatoes, chopped
  • 1 large ⦁ red onion, thinly sliced
  • 1 cucumber, ⦁ chopped (optional)
  • 1 green ⦁ 1-2 chilies, finely chopped
  • 1 tablespoon ⦁ fresh cilantro, chopped
  • 1 of ⦁ Juice lemon or lime
  • ⦁ Salt to taste
Instructions
    Prepare the Vegetables:
  1. ⦁ Chop the tomatoes, thinly slice the red onion, and chop the cucumber (if using).
  2. Combine Ingredients:
  3. ⦁ In a large mixing bowl, combine the chopped tomatoes, sliced onions, cucumber, and green chilies.
  4. Add Fresh Herbs and Citrus:
  5. ⦁ Add the chopped cilantro to the bowl.
  6. ⦁ Squeeze the lemon or lime juice over the salad.
  7. Season:
  8. ⦁ Sprinkle with salt to taste.
  9. ⦁ Toss everything together until well mixed.
  10. Serve:
  11. ⦁ Serve the Kachumbari immediately as a fresh side dish with grilled meats, pilau rice, or enjoy on its own as a refreshing salad.
