Description

Groundnut Soup, also known as Nkatenkwan or Maafe, is a popular dish in Cameroon and other West African countries. It's a rich, creamy soup made with groundnuts (peanuts), meat, and a blend of spices. It's typically served with rice, pounded yam, or fufu.

Ingredients
  • 1 cup ⦁ raw groundnuts (peanuts)
  • 1 pound ⦁ beef (or chicken)
  • 1 large ⦁ onion, finely chopped
  • 3 garlic ⦁ cloves, minced
  • 1 piece ⦁ -inch of ginger, grated
  • 2 tomatoes, ⦁ diced or blended
  • 1/2 cup ⦁ vegetable oil (or palm oil)
  • 3 small ⦁ seasoning cubes (such as Maggi)
  • 1/2 teaspoon ⦁ ground black pepper
  • ⦁ Salt to taste
  • ⦁ Optional: smoked fish, dried shrimp, or crayfish for added flavor
