Description

Eru, also known as Okazi or Ukase, is a traditional Cameroonian soup made with bitterleaf (Gnetum africanum) and various proteins. It's a nutritious and flavorful dish often served with starchy sides like fufu, garri, or pounded yam.

Ingredients
  • 500 grams ⦁ bitterleaf (eru)
  • 500 grams ⦁ beef, tripe, or smoked turkey, cut into chunks
  • 1 cup ⦁ dried fish, soaked and cleaned
  • 1 cup ⦁ ground crayfish
  • 2 large ⦁ onions, finely chopped
  • 2 tomatoes, ⦁ chopped
  • 2 cloves ⦁ garlic, minced
  • 1 habanero ⦁ pepper (optional)
  • 1 teaspoon ⦁ salt
  • 2 teaspoons ⦁ seasoning powder or bouillon cubes
  • 3 cups ⦁ 3-4 palm oil
  • ⦁ Water for boiling
  • ⦁ Fresh spinach or waterleaf (optional)
