Ekwang, also known as Ekpang Nkukwo, is a traditional Cameroonian dish made from grated cocoyam (taro) and beans, wrapped in leafy greens and slowly simmered with various types of fresh or smoked meat, fish, crayfish, red oil, and other spices. It's a rich and flavorful dish that's perfect for special occasions and
family gatherings.

Ingredients
  • 4 pounds ⦁ cocoyam (taro)
  • 4 bunches ⦁ 4-5 of cocoyam leaves, collard greens, spinach, or romaine lettuce
  • ⦁ ½ pound boiled meat (beef, goat, or chicken)
  • 1 cups ⦁ 1-2 dried fish, soaked and cleaned
  • ⦁ ½ cup ground crayfish
  • ⦁ ½ medium onion, chopped
  • 1 tablespoon ⦁ bouillon granules (Maggi)
  • 1 tablespoon ⦁ ground country onions (optional)
  • 1 teaspoon ⦁ white pepper
  • 1 scotch ⦁ bonnet pepper or any hot pepper (optional)
  • 1 ½ ⦁ 1 - 2 cups palm oil (red oil)
  • ⦁ Water for cooking
