Description

Ekpang Nkukwo, also known as Ekwang, is a traditional Nigerian dish from the South-South Eastern part of Nigeria, particularly among the Efiks and Ibibios. It's made from freshly grated cocoyam and water yam, wrapped in leafy greens, and slowly simmered with various types of fresh or smoked meat, fish, crayfish, red oil, and other spices. It's a hearty and flavorful dish often reserved for special occasions.

Ingredients
  • 3 medium-sized ⦁ cocoyams
  • 2 small ⦁ water yams (optional)
  • 4 bunches ⦁ of cocoyam leaves (or other leafy greens like spinach or collard greens)
  • 1/2 pound ⦁ beef, cut into pieces
  • 1/2 pound ⦁ dried fish
  • 1/2 cup ⦁ ground crayfish
  • 1 large ⦁ onion, finely chopped
  • 2 tablespoons ⦁ palm oil (or red oil)
  • 1 tablespoon ⦁ tomato paste
  • 1 teaspoon ⦁ white pepper
  • 1 scotch ⦁ bonnet pepper (or any hot pepper)
  • 1 tablespoon ⦁ locust beans (iru)
  • 1 teaspoon ⦁ thyme (dried or fresh)
  • 1 teaspoon ⦁ salt (to taste)
  • 2 seasoning ⦁ cubes (Maggi or Knorr)
  • 3 cups ⦁ water
