Egusi Soup is a popular West African dish made from ground melon seeds (egusi), cooked with tomatoes, onions, and spices. It's hearty and flavorful, often served with pounded yam, fufu, or rice.
Ingredients
2cups ⦁ ground egusi (melon seeds)
1large ⦁ onion, finely chopped
2tomatoes, ⦁ finely chopped
2green ⦁ chilies, finely chopped
2cloves ⦁ garlic, minced
1piece ⦁ -inch ginger, minced
2tablespoons ⦁ red palm oil (or vegetable oil)
1teaspoon ⦁ ground ginger
1teaspoon ⦁ ground garlic
1teaspoon ⦁ ground cayenne pepper
⦁ Salt (to taste)
⦁ Water or beef broth
1pound ⦁ beef (or goat meat)
1pound ⦁ smoked fish, deboned
1pound ⦁ spinach or bitterleaf, cleaned and chopped
1cup ⦁ waterleaf, cleaned and chopped
2seasoning ⦁ cubes
Instructions
Prepare the Meat: Season the beef cubes with salt, ground ginger, ground garlic, and cayenne pepper. Let it marinate for about 30 minutes.
Cook the Meat: Heat the red palm oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger, and sauté until the onion is soft and translucent.
Add Tomatoes and Spices: Add the chopped tomatoes and green chilies to the pot. Cook until the tomatoes are soft and the mixture is well combined.
Combine Ingredients: Add the marinated beef cubes to the pot and stir to coat them with the sauce. Add enough water or beef broth to cover the beef and bring to a boil. Reduce heat and let it simmer for about 1.5 hours, until the beef is tender.
Add Egusi: Add the ground egusi to the pot and stir to combine. Add more water or broth if needed to reach your desired consistency. Let it simmer for about 30 minutes, until the flavors meld together.
