Description

Edikaikong, also known as Edikang Ikong, is a highly nutritious and savory vegetable soup native to the Efik and Ibibio people of Cross River and Akwa Ibom states in Nigeria. It is made with a combination of water leaves (Talinum triangulare) and fluted pumpkin leaves (Ugwu), along with assorted meats and seafood. This soup is known for its rich flavor and is often enjoyed with a swallow like fufu, eba, or semo.

Ingredients
  • 1 kg ⦁ pumpkin leaves (Ugwu)
  • 500 water ⦁ g leaves (Talinum triangulare)
  • 600 assorted ⦁ g meat (beef, goat meat, shaki)
  • 200 dry ⦁ g fish
  • 1 cup ⦁ periwinkles (optional)
  • 2 medium ⦁ onions
  • 2 stock ⦁ 2-3 cubes
  • 200 ml ⦁ palm oil
  • 1 cup ⦁ ground crayfish
  • 2 scotch ⦁ bonnet peppers
  • ⦁ Salt and pepper to taste
  • 1 cup ⦁ smoked shrimp (optional)
  • ⦁ Utazi leaves (for garnish)
