Description

Angwamu, also known as Oil Rice, is a popular Ghanaian dish made by frying rice in oil with onions and spices. It's often served with fried eggs, sardines, or a spicy pepper sauce. The dish is known for its rich, savory flavor and golden color.

Ingredients
  • 2 cups ⦁ long-grain rice (such as Jasmine or Basmati)
  • 1/4 cup ⦁ vegetable oil (or palm oil)
  • 1 large ⦁ onion, finely chopped
  • 1/4 cup ⦁ salted beef (tolo beef)
  • 1 bouillon ⦁ cube (chicken or beef flavor)
  • 3 1/2 cups ⦁ water
  • ⦁ Salt to taste
  • ⦁ Optional: smoked fish or dried shrimp for added flavor
Instructions
  1. Prepare the Rice:
  2. ⦁ Rinse the rice under cold water until the water runs clear. Drain and set aside.
  3. Cook the Onions:
  4. ⦁ In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until golden brown, about 15 minutes. Remove half of the onions and set aside for garnish.
  5. Add the Salted Beef:
  6. ⦁ If using salted beef, add it to the pot and fry for another 5 minutes, stirring frequently, until it becomes crisp.
  7. Fry the Rice:
  8. ⦁ Add the rinsed rice to the pot and stir to coat the rice with the oil and onion mixture. Fry for about 2 minutes, stirring constantly.
  9. Add Water and Bouillon:
  10. ⦁ Pour in the water and add the bouillon cube. Bring the mixture to a boil, then reduce the heat to low, cover the pot with a lid, and let it simmer for about 20 minutes, or until the rice is cooked and the water is absorbed.
  11. Fluff and Serve:
  12. ⦁ Fluff the rice with a fork and garnish with the reserved fried onions. Serve hot with fried eggs, sardines, or a spicy pepper sauce. Enjoy!
